Savarina (n) - a sponge cake dipped in rum syrup and decorated with whipped cream and candied cherries, named for the legendary gastronome and famous French chef, Jean Anthelme Brillat-Savarin. The Savarina was created in 1845 by August Julian as a gift of gratitude to Brillat Savarin, who published a book called "The Physiology of Taste" in 1825.

He also holds demonstrations, both beginner and intermediate, to the general public at the cafe.
